Ingredients
  

  • 1 lb ground beef or turkey
  • 1/2 cup uncooked rice
  • 1/4 cup chopped cilantro
  • 1 egg
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 onion finely chopped
  • 4 cups chicken broth
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 can diced tomatoes
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine ground meat, rice, cilantro, egg, cumin, garlic powder, salt, and pepper.
  • Mix until well combined and form into small meatballs.
  • In a large pot, heat a splash of oil over medium heat.
  • Add chopped onions and sauté until translucent.
  • Pour in the chicken broth and bring to a boil.
  • Add the meatballs carefully into the boiling broth.
  • Reduce heat to a simmer and cook for about 15 minutes.
  • Add sliced carrots and celery, simmer for another 10 minutes.
  • Stir in the canned tomatoes and heat through.
  • Season with additional salt and pepper to taste before serving.
