- 1 lb ground beef or turkey
- 1/2 cup uncooked rice
- 1/4 cup chopped cilantro
- 1 egg
- 1 tsp cumin
- 1 tsp garlic powder
- 1 onion finely chopped
- 4 cups chicken broth
- 2 carrots sliced
- 2 stalks celery sliced
- 1 can diced tomatoes
- Salt and pepper to taste
In a large bowl, combine ground meat, rice, cilantro, egg, cumin, garlic powder, salt, and pepper.
Mix until well combined and form into small meatballs.
In a large pot, heat a splash of oil over medium heat.
Add chopped onions and sauté until translucent.
Pour in the chicken broth and bring to a boil.
Add the meatballs carefully into the boiling broth.
Reduce heat to a simmer and cook for about 15 minutes.
Add sliced carrots and celery, simmer for another 10 minutes.
Stir in the canned tomatoes and heat through.
Season with additional salt and pepper to taste before serving.
