Ingredients
  

  • 2 large cucumbers thinly sliced
  • 1 red bell pepper julienned
  • 1 yellow bell pepper julienned
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Wash the cucumbers and bell peppers thoroughly.
  • Slice the cucumbers into thin rounds.
  • Julienne the red and yellow bell peppers.
  • In a large bowl, combine the sliced cucumbers and bell peppers.
  • In a small bowl, mix together sesame oil, rice vinegar, soy sauce, and sugar.
  • Pour the dressing over the vegetables and toss to coat.
  • Season with salt and pepper to taste.
  • Sprinkle sesame seeds on top.
  • Garnish with fresh cilantro before serving.
