- 3 ripe bananas mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon cinnamon optional
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a mixing bowl, mash the ripe bananas until smooth.
Add the melted butter to the mashed bananas and mix well.
Stir in the baking soda and salt.
Add the sugar, beaten egg, and vanilla extract, and mix until combined.
Gently fold in the flour until just incorporated.
If using, add the cinnamon and mix lightly.
Pour the batter evenly into the prepared muffin tin.
Bake for 20-25 minutes or until a toothpick comes out clean.
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.
