Ingredients
  

  • 1 ripe banana
  • 1 cup rolled oats
  • 1 cup milk dairy or non-dairy
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 tsp vanilla extract
  • Cooking oil or butter for frying

Instructions
 

  • In a blender, combine rolled oats, banana, milk, egg, baking powder, cinnamon, salt, and vanilla extract.
  • Blend until smooth and well combined.
  • Let the batter sit for 5 minutes to thicken.
  • Heat a non-stick skillet over medium heat and add oil or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Remove from skillet and keep warm while cooking the remaining batter.
  • Serve pancakes warm with your favorite toppings.
