Ingredients
  

  • 8 oz. noodles spaghetti or lo mein
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 cup mixed vegetables carrots, bell peppers, peas
  • 1 green onion sliced
  • 1 tsp sesame seeds
  • Salt and pepper to taste
  • Fresh herbs basil or cilantro for garnish

Instructions
 

  • Boil water in a large pot and cook the noodles according to package instructions until al dente.
  • Drain the noodles and rinse under cold water to stop cooking.
  • In a large skillet, heat vegetable oil over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Add mixed vegetables and stir-fry for about 3-4 minutes until tender.
  • In a bowl, mix soy sauce and sesame oil together.
  • Add the cooked noodles to the skillet with vegetables.
  • Pour the soy sauce mixture over the noodles and toss to coat evenly.
  • Season with salt and pepper to taste.
  • Sprinkle sesame seeds and sliced green onion on top before serving.
