Ingredients
  

  • 1 lb fresh shrimp cleaned and deveined
  • 4 cups fish stock or water
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 carrot sliced
  • 1 celery stalk sliced
  • 1 bell pepper chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add diced tomatoes, carrots, and celery, cooking until slightly softened.
  • Pour in the fish stock or water, bringing it to a boil.
  • Add the shrimp and bell pepper, cooking until shrimp turns pink.
  • Season with cumin, salt, and pepper to taste.
  • Let the soup simmer for 10 minutes to blend the flavors.
  • Remove from heat and garnish with fresh cilantro.
  • Serve hot with lime wedges on the side.
