- 1 lb fresh shrimp cleaned and deveined
- 4 cups fish stock or water
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 medium tomato diced
- 1 carrot sliced
- 1 celery stalk sliced
- 1 bell pepper chopped
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onions and sauté until translucent.
Stir in minced garlic and cook for an additional minute.
Add diced tomatoes, carrots, and celery, cooking until slightly softened.
Pour in the fish stock or water, bringing it to a boil.
Add the shrimp and bell pepper, cooking until shrimp turns pink.
Season with cumin, salt, and pepper to taste.
Let the soup simmer for 10 minutes to blend the flavors.
Remove from heat and garnish with fresh cilantro.
