- 1 lb boneless chicken breast
- 1 cup gnocchi
- 1 medium onion diced
- 2 cloves garlic minced
- 2 carrots sliced
- 2 celery stalks sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
In a large pot, heat a splash of oil over medium heat.
Add the diced onion, carrots, and celery; sauté until softened.
Stir in the minced garlic and cook for another minute.
Add the chicken breast to the pot and pour in the chicken broth.
