Ingredients
  

  • 1 lb boneless chicken breast
  • 1 cup gnocchi
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot, heat a splash of oil over medium heat.
  • Add the diced onion, carrots, and celery; sauté until softened.
  • Stir in the minced garlic and cook for another minute.
  • Add the chicken breast to the pot and pour in the chicken broth.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Remove the chicken, shred it, and return it to the pot.
  • Add the gnocchi and thyme, simmer for 5 more minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Let the soup heat through, then remove from heat.
  • Serve hot, garnished with fresh parsley.
