Ingredients
  

  • 4 medium potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: green onions bacon bits

Instructions
 

  • Peel and dice the potatoes into small cubes.
  • Chop the onion and mince the garlic.
  • Add the diced potatoes, onion, and garlic to the crock pot.
  • Pour in the vegetable or chicken broth.
  • Season with salt and pepper to taste.
  • Stir the ingredients to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once the potatoes are tender, use a potato masher to mash some of the potatoes.
  • Stir in the heavy cream and shredded cheddar cheese until melted.
  • Serve hot, topped with green onions or bacon bits as desired.
