Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup frozen peas and carrots
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions
 

  • Season the chicken breasts with salt, pepper, and paprika.
  • Heat olive oil in a skillet over medium heat.
  • Sear the chicken for 2-3 minutes on each side until golden brown.
  • In the crockpot, add chopped onion and minced garlic.
  • Pour the rice evenly over the onions and garlic.
  • Place the seared chicken on top of the rice.
  • Add frozen peas and carrots over the chicken.
  • Pour the chicken broth over all the ingredients.
  • Cover and cook on low for 6 hours or high for 3 hours.
  • Fluff the rice with a fork before serving.
