Ingredients
  

  • 2 pounds pork tenderloin
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Trim excess fat from the pork tenderloin.
  • Season the tenderloin generously with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear the pork tenderloin on all sides until browned, about 3-4 minutes per side.
  • Transfer the seared pork to the crockpot.
  • Pour the chicken broth over the pork in the crockpot.
  • Cover and cook on low for 6 to 8 hours or until the pork is tender.
  • Once cooked, remove the pork tenderloin and let it rest for 10 minutes.
  • Slice the tenderloin into medallions.
  • Serve with the cooking juices and garnish with fresh parsley.
