- 1 cup long-grain rice
- 2 large onions thinly sliced
- 4 cups beef or vegetable broth
- 2 tablespoons butter
- 1 teaspoon thyme
- 1 cup Gruyère cheese shredded
- Salt and pepper to taste
- Chopped parsley for garnish
Heat butter in a large pot over medium heat.
Add sliced onions and sauté until caramelized, about 15 minutes.
Stir in thyme, salt, and pepper.
Add rice to the pot and stir to coat with the onion mixture.
Pour in the broth and bring to a boil.
Reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
Remove from heat and let sit covered for 5 minutes.
Stir in half of the Gruyère cheese until melted.
Transfer to a serving dish and top with remaining cheese.
Broil for 2-3 minutes until cheese is bubbly and golden.
