French Onion Soup Rice

Ingredients
  

  • 1 cup long-grain rice
  • 2 large onions thinly sliced
  • 4 cups beef or vegetable broth
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1 cup Gruyère cheese shredded
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

  • Heat butter in a large pot over medium heat.
  • Add sliced onions and sauté until caramelized, about 15 minutes.
  • Stir in thyme, salt, and pepper.
  • Add rice to the pot and stir to coat with the onion mixture.
  • Pour in the broth and bring to a boil.
  • Reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
  • Remove from heat and let sit covered for 5 minutes.
  • Stir in half of the Gruyère cheese until melted.
  • Transfer to a serving dish and top with remaining cheese.
  • Broil for 2-3 minutes until cheese is bubbly and golden.
