Ingredients
  

  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 large onion chopped
  • 2 cups blended tomatoes
  • 1 teaspoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: diced bell peppers peas, and carrots

Instructions
 

  • Rinse the rice under cold water until the water runs clear, then drain.
  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onions and sauté until translucent.
  • Stir in the blended tomatoes and tomato paste; cook for about 10-15 minutes until thickened.
  • Add thyme, curry powder, and bay leaf; mix well.
  • Pour in the chicken broth and bring to a boil.
  • Season with salt and pepper to taste.
  • Add the drained rice to the pot, stirring to combine.
  • Cover the pot, reduce the heat to low, and let it simmer for about 20-30 minutes.
  • Fluff the rice with a fork and serve hot.
