- 2 large leeks cleaned and sliced
- 2 medium potatoes peeled and diced
- 1 onion chopped
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh thyme for garnish
Clean the leeks thoroughly and slice them.
Chop the onion and dice the potatoes.
Melt butter in a large pot over medium heat.
Add leeks and onion, sauté until soft and translucent.
Add diced potatoes and cook for a few minutes.
Pour in the vegetable broth and bring to a boil.
Reduce heat and simmer for about 20 minutes until potatoes are tender.
Use an immersion blender to puree the soup until smooth.
Stir in heavy cream and season with salt and pepper.
