Ingredients
  

  • 4 large potatoes peeled and diced
  • 2 leeks cleaned and sliced
  • 1 onion chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh chives for garnish optional

Instructions
 

  • Clean the leeks thoroughly to remove any dirt.
  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and sliced leeks, cooking until softened.
  • Stir in the diced potatoes and cook for another 5 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes, until the potatoes are tender.
  • Using an immersion blender, puree the soup until smooth.
  • Stir in the heavy cream and season with salt and pepper.
  • Heat through but do not boil after adding cream.
  • Serve hot, garnished with fresh chives if desired.
