Ingredients
  

  • 1 cup dried red beans
  • 1/2 pound smoked sausage sliced
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 1/2 cups cooked white rice

Instructions
 

  • Rinse and soak the dried red beans overnight in water.
  • Drain the beans and set them aside.
  • In a large pot, cook the sliced sausage over medium heat until browned.
  • Add the chopped onion and bell pepper; sauté until softened.
  • Stir in the minced garlic and cook for another minute.
  • Add the soaked beans, chicken broth, cumin, paprika, and bay leaf.
  • Bring the mixture to a boil, then reduce heat to low.
  • Cover and simmer for about 1 hour, or until beans are tender.
  • Season with salt and pepper to taste.
  • Serve the red beans over cooked white rice and enjoy!
