- 1 cup dried red beans
- 1/2 pound smoked sausage sliced
- 1 medium onion chopped
- 1 bell pepper chopped
- 2 cloves garlic minced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
- 1 1/2 cups cooked white rice
Rinse and soak the dried red beans overnight in water.
Drain the beans and set them aside.
In a large pot, cook the sliced sausage over medium heat until browned.
Add the chopped onion and bell pepper; sauté until softened.
Stir in the minced garlic and cook for another minute.
Add the soaked beans, chicken broth, cumin, paprika, and bay leaf.
Bring the mixture to a boil, then reduce heat to low.
Cover and simmer for about 1 hour, or until beans are tender.
Season with salt and pepper to taste.
