Ingredients
  

  • 2 cups rotisserie chicken shredded
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 bell pepper diced
  • 1/2 red onion thinly sliced
  • 1 avocado diced
  • 1/4 cup feta cheese optional
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Shred the rotisserie chicken into bite-sized pieces.
  • Wash and dry the mixed greens thoroughly.
  • Place the mixed greens in a large salad bowl.
  • Add the shredded chicken on top of the greens.
  • Slice the cucumber and add it to the bowl.
  • Halve the cherry tomatoes and add them as well.
  • Dice the bell pepper and add it to the salad.
  • Thinly slice the red onion and include it in the mix.
  • If using, add the diced avocado and feta cheese.
  • Whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and toss gently to combine.
