- 2 cups rotisserie chicken shredded
- 4 cups mixed greens
- 1 cup cherry tomatoes halved
- 1 cucumber sliced
- 1 bell pepper diced
- 1/2 red onion thinly sliced
- 1 avocado diced
- 1/4 cup feta cheese optional
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Shred the rotisserie chicken into bite-sized pieces.
Wash and dry the mixed greens thoroughly.
Place the mixed greens in a large salad bowl.
Add the shredded chicken on top of the greens.
Slice the cucumber and add it to the bowl.
Halve the cherry tomatoes and add them as well.
Dice the bell pepper and add it to the salad.
Thinly slice the red onion and include it in the mix.
If using, add the diced avocado and feta cheese.
Whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
Drizzle the dressing over the salad and toss gently to combine.
