Ingredients
  

  • 1 can 14.75 oz salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup onion finely chopped
  • 1/4 cup bell pepper finely chopped
  • 2 eggs beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions
 

  • In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, and bell pepper.
  • Add the beaten eggs, Dijon mustard, and parsley to the bowl.
  • Season the mixture with salt and pepper to taste.
  • Mix all ingredients thoroughly until well combined.
  • Shape the mixture into 8 equal patties.
  • Heat olive oil in a skillet over medium heat.
  • Add the patties to the skillet, cooking in batches if necessary.
  • Fry for about 4-5 minutes on each side, or until golden brown.
  • Remove the patties from the skillet and drain on paper towels.
  • Serve warm with lemon wedges and your favorite dipping sauce.
