- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 medium onion diced
- 1 bell pepper diced
- 2 cloves garlic minced
- 1 can 14 oz diced tomatoes
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Rinse the rice under cold water until the water runs clear.
In a medium pot, heat a splash of oil over medium heat.
Add the diced onion and bell pepper; sauté until softened.
Stir in the minced garlic and cook for an additional minute.
Add the rinsed rice to the pot and toast for 2-3 minutes.
Pour in the diced tomatoes (with juice) and broth.
Season with chili powder, cumin, salt, and pepper.
Bring to a boil, then reduce heat to low.
Cover and simmer for 15-20 minutes, or until the rice is tender.
Fluff with a fork and garnish with fresh cilantro.
