Ingredients
  

  • 4 cups fresh spinach
  • 1 orange segmented
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/2 avocado diced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Wash the fresh spinach leaves thoroughly and pat them dry.
  • Place the spinach in a large salad bowl.
  • Segment the orange and add the pieces to the bowl.
  • Halve the cherry tomatoes and toss them in.
  • Thinly slice the red onion and add it for crunch.
  • Dice the avocado and gently fold it into the salad.
  • Crumble feta cheese over the top for added flavor.
  • In a small bowl, whisk together olive oil and balsamic vinegar.
  • Drizzle the dressing over the salad and toss gently.
  • Season with salt and pepper to taste before serving.
