Ingredients
  

  • 4 bone-in pork chops
  • 1 cup breadcrumbs
  • 1/2 cup diced onions
  • 1/2 cup diced apples
  • 1/4 cup dried cranberries
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat.
  • Add onions and garlic, sauté until translucent.
  • Stir in apples, cranberries, thyme, salt, and pepper.
  • Mix in breadcrumbs until well combined.
  • Cut pockets into the pork chops carefully.
  • Stuff each chop generously with the filling.
  • Season the outside of the chops with salt and pepper.
  • In the skillet, sear the chops for 3-4 minutes on each side.
  • Transfer to the oven and bake for 20-25 minutes until cooked through.
