- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1/2 cup shredded cheese mozzarella or cheddar
- 1/4 cup chopped onions
- 2 cloves garlic minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh basil for garnish

Slice the zucchinis in half lengthwise and scoop out the center.
