Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups grated zucchini
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, mix the oil and sugar until well combined.
  • Add the eggs and vanilla extract to the oil-sugar mixture, beating until smooth.
  • Gradually incorporate the dry ingredients into the wet mixture.
  • Fold in the grated zucchini until evenly distributed.
  • If desired, add nuts or chocolate chips and stir gently.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick comes out clean from the center.
