- 2 pounds fresh ripe tomatoes
- 2 tablespoons olive oil
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- A pinch of sugar optional
- Fresh basil leaves for garnish
Wash the tomatoes and remove the stems.
Blanch the tomatoes in boiling water for 1-2 minutes, then cool in ice water.
Peel the skin off the tomatoes and chop them.
Heat olive oil in a saucepan over medium heat.
Add chopped onion and sauté until translucent.
Stir in minced garlic and cook for another minute.
Add chopped tomatoes, oregano, and basil.
Season with salt, pepper, and sugar, if desired.
Simmer the sauce for 20-30 minutes.
Blend the sauce for a smoother texture, if preferred.
