Ingredients
  

  • 2 pounds fresh ripe tomatoes
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • A pinch of sugar optional
  • Fresh basil leaves for garnish

Instructions
 

  • Wash the tomatoes and remove the stems.
  • Blanch the tomatoes in boiling water for 1-2 minutes, then cool in ice water.
  • Peel the skin off the tomatoes and chop them.
  • Heat olive oil in a saucepan over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add chopped tomatoes, oregano, and basil.
  • Season with salt, pepper, and sugar, if desired.
  • Simmer the sauce for 20-30 minutes.
  • Blend the sauce for a smoother texture, if preferred.
