Ingredients
  

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup radishes sliced
  • 1/2 cup red onion diced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Parmesan cheese for topping optional

Instructions
 

  • Bring a pot of salted water to a boil.
  • Add the tortellini and cook according to package instructions until al dente.
  • Drain the tortellini and rinse under cold water.
  • In a large bowl, combine the cooked tortellini, cherry tomatoes, radishes, red onion, and basil.
  • In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Adjust seasoning to taste.
  • Let the salad sit for at least 10 minutes to allow flavors to meld.
  • Serve chilled or at room temperature.
  • Top with Parmesan cheese if desired.
