- 1 lb ground turkey
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 can 28 oz diced tomatoes
- 1 onion chopped
- 2 cloves garlic minced
- 1 bell pepper chopped
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
Heat olive oil in a large pot over medium heat.
Add chopped onion and bell pepper; sauté until softened.
Stir in minced garlic and cook for another minute.
Add ground turkey to the pot; cook until browned.
Sprinkle chili powder and cumin over the turkey; mix well.
Pour in the diced tomatoes, including juice.
Add both types of beans; stir to combine.
Season with salt and pepper to taste.
Bring the mixture to a boil, then reduce heat to low.
Simmer for 20 minutes, stirring occasionally.
