- 2 cups red cabbage finely shredded
- 1 cup carrots grated
- 1/2 cup apple cider vinegar
- 1/4 cup sugar
- 1 teaspoon salt

- 1/4 cup olive oil
- 1 tablespoon Dijon mustard
- Optional: chopped parsley for garnish
