Ingredients
  

  • 4 cups green cabbage finely shredded
  • 2 cups red cabbage finely shredded
  • 1 cup carrots grated
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • Optional: chopped parsley for garnish

Instructions
 

  • In a large bowl, combine the green cabbage, red cabbage, and grated carrots.
  • In a separate bowl, whisk together apple cider vinegar, sugar, salt, pepper, olive oil, and Dijon mustard until well blended.
  • Pour the dressing over the cabbage mixture.
  • Toss the vegetables gently to coat with the dressing.
  • Let the coleslaw sit for about 10 minutes to allow flavors to meld.
  • Taste and adjust seasoning as needed.
  • If desired, garnish with chopped parsley.
  • Serve immediately or refrigerate for up to 2 hours before serving for a chilled option.
