Ingredients
  

  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Wash the watermelon thoroughly under cold water.
  • Slice the watermelon into halves, then cut into quarters.
  • Remove the rind and cut the flesh into bite-sized cubes.
  • Place the watermelon cubes in a large mixing bowl.
  • Crumble the feta cheese over the watermelon.
  • Add the chopped mint leaves to the bowl.
  • In a small bowl, whisk together olive oil and balsamic vinegar.
  • Pour the dressing over the salad ingredients.
  • Gently toss the salad to combine.
  • Season with salt and pepper to taste before serving.
