- 1 lb boneless skinless chicken breasts
- 1 can 15 oz white beans, drained and rinsed
- 1 can 4 oz diced green chilies
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 1 cup sour cream
- Salt and pepper to taste
- Chopped cilantro for garnish
In a large pot, sauté the chopped onion and minced garlic until fragrant.
Add the chicken breasts and cook until lightly browned.
Stir in the diced green chilies, cumin, oregano, and chili powder.
Pour in the chicken broth and bring to a boil.
Reduce heat and let simmer for 20 minutes, or until chicken is cooked through.
Remove the chicken, shred it, and return it to the pot.
Add the white beans and stir well.
Mix in the sour cream until well combined.
Season with salt and pepper to taste.
Garnish with chopped cilantro before serving.
