- 1 cup cooked quinoa
- 1 can black beans rinsed and drained
- 1 cup diced tomatoes
- 1/2 cup corn kernels
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/2 cup shredded cheese optional
- Fresh herbs for garnish
Preheat your oven to 375°F (190°C).
Wash the zucchinis and slice them in half lengthwise.
Using a spoon, scoop out the seeds to create a hollow space.
In a mixing bowl, combine cooked quinoa, black beans, diced tomatoes, and corn.
Add cumin, chili powder, salt, and pepper to the mixture.
Fill each zucchini half with the quinoa mixture.
Place the filled zucchinis on a baking sheet.
Sprinkle cheese on top if desired.
