Ingredients
  

  • 2 medium zucchinis
  • 1 cup cooked quinoa
  • 1 can black beans rinsed and drained
  • 1 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese optional
  • Fresh herbs for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Wash the zucchinis and slice them in half lengthwise.
  • Using a spoon, scoop out the seeds to create a hollow space.
  • In a mixing bowl, combine cooked quinoa, black beans, diced tomatoes, and corn.
  • Add cumin, chili powder, salt, and pepper to the mixture.
  • Fill each zucchini half with the quinoa mixture.
  • Place the filled zucchinis on a baking sheet.
  • Sprinkle cheese on top if desired.
  • Bake in the preheated oven for about 25 minutes.
  • Remove from the oven and let cool slightly before serving. Garnish with fresh herbs.
